ok i have to admit that i am not the biggest salad ok i have to admit that i am not the biggest salad lover 🤷🏼‍♀️ as much as i love veggies, i dont really love salads. however, some days, like today, i crave a big bowl of salad. i honestly think that the key to liking salads is to make them interesting. no one wants to eat a bowl of plain lettuce. but when you add in colorful toppings, it makes it more interesting to eat. actually, research has shown that when we have a variety of colors on our plate, the food is a lot more satisfying and enjoyable to eat! i tell a lot of patients to eat the rainbow and it is really important! when we eat a variety of colors and foods, we are getting a variety of nutrients, antioxidants, and benefits for our body. each color in fruits and vegetables represents a different compound, called a phytochemical. phytochemicals are natural antioxidant, anti-inflammatory, and disease fighting compounds found only in whole plant-based foods. so much research has been done showing the role of these phytochemicals in preventing cancer, heart disease, and other conditions. so next time you make a meal think about how colorful it is. trying out different colors of foods can make nutritious meals so much more satisfying and appealing! on my salad i have tomatoes, red onion, jalapeños, roasted edamame, roasted chickpeas, and pumpkin seeds
simple lunch on this rainy thursday ☁️ throwba simple lunch on this rainy thursday ☁️ throwback to when i used to eat sweet potatoes pretty much every day 🙈 its been a minute since i made sweet potato fries but found that i was craving them today! so i made them with some leftover pasta and tofu and it was the perfect lunch! i hope you all are having a wonderful thursday! i’m hoping the rain stops later so i can get outside for a little bit!

i dont think i’ve met a single person who doesn’t like sandwiches. personally, i love them and they make the perfect quick and easy lunch! i made this toasted sandwich with a black bean quinoa burger, horseradish hummus, onion, jalapenos, and lettuce! i put it on my panini press and toasted it for a couple mins and it was delicious! i hope you all have a great monday!! 💛💛
green smoothie bowl for breakfast this morning 🤩 its super sunny today out here in ohio and i’m getting full on spring vibes. its supposed to be 60 degrees tomorrow which makes me super happy!!! already can’t wait for summer and getting back to being outdoors more. i hope where ever you all are on this sunday, its sunny out 🌞 do you have any fun sunday plans? in the bowl👉🏼 spinach, mango, banana, and strawberries topped with granola, chia seeds, and almond butter
saturdays call for burritos right? i used some of saturdays call for burritos right? i used some of the leftovers from my burrito bowl the other day to make this delicious chipotle-style burrito 🌯 in the burrito i put quinoa, black beans, refried beans, red onion, tomato, avocado, and sweet chili sauce. it was so good 🤩 i hope you all have a wonderful saturday 💛💛
its friday!!! yay!!! made this yummy quinoa bowl f its friday!!! yay!!! made this yummy quinoa bowl for lunch yesterday while i was working from home. i used to make these all the time and forgot how much i love them. quinoa is such a great grain as its loaded with fiber, protein, and so many nutrients. i typically do 1/2 quinoa and 1/2 brown rice, just because i prefer the texture of rice. i topped the bowl with air fried tofu, black beans, onions, tomatoes, and avocado. i finished it off with a sweet chili sauce and it was so good! HOW TO MAKE: For the tofu: Drain and press your tofu. Cut it into medium sized blocks and coat with some corn starch. Place in the air fryer and spray with a little olive oil. Bake at 400 for 15 minutes, flipping halfway. Then I coated mine in a little teriyaki sauce and baked for another 5 mins. This is the perfect way to get your tofu crispy! For the bowl: I cooked up some quinoa and brown rice on the stove. I also cooked up some black beans. I like using canned beans because they are cheaper and easier! I just drain and rinse them first to reduce the sodium content. Once everything is done, add the quinoa and rice to a bowl and top with the tofu, red onion, tomatoes, beans, avocado, and sauce of choice! Enjoy!! 🤩
happy wednesday!! made this super easy and delicio happy wednesday!! made this super easy and delicious wrap for lunch the other day and it is now one of my favorite things to make! i made it using the four fold system (haha ive seen a bunch of videos on it) where you cut a line halfway down the wrap and then fold it four ways into a triangle! it makes toasting your wraps so much easier and kinda tastes like a crunchwrap supreme In the wrap 👉🏼 refried beans, tomatoes, onion, avocado, horseradish hummus I also used a spinach wrap instead because it is what i had on hand and it worked really well! I sprayed some olive oil on a saucepan and cooked the wrap on medium heat on both sides! Super good!!
happy monday!! something i feel so passionately ab happy monday!! something i feel so passionately about is the words we use to describe food. in the social media wellness community (and beyond) i see so many different words describing food. some of these may not seem bad at first, but looking closer they can actually be pretty harmful. some words we should think twice about before using to describe food: - good or bad (this implies that food has a moral system and can promote restriction of foods we deem “bad” and lead to disordered eating tendencies) - clean (this is one of my least favorite ways to describe food. what does “clean” food even mean???? this again places a value system on food that we really don’t need) - guilt-free (food should not make us feel guilty!!! repeat it again. you do not have to compensate for eating any kind of food!!!) - detox/ cleanse (we have a liver and kidneys that do this for us already) - cheat meal (same as guilt-free, allow yourself to enjoy foods that you like without feeling guilty or feeling as if you have to workout to burn it off) - skinny (nope. this one should explain itself.) - sinful (again this just demonizes certain foods and makes people feel bad for eating them. you should not feel guilty for eating a cookie or cake or ice cream) words we should use instead to describe food: - nourishing ( i love using this one because it puts into perspective what food actually does for us, it provides our body with energy and nutrients that it needs. and yes this is ALL foods) - delicious (because yes, food is delicious) - balanced (allow yourself to have balance in the foods you eat and your life. eat foods you enjoy and avoid restricting yourself) - energizing (food provides us with the energy we need to live!!!) - satisfying (all the food you eat should satisfy you. if you hate a food, you don’t have to eat it) switching our mentality around food and the ways we describe it are so important in dismantling diet culture. diet culture tells us that some foods are good and some are bad. i’m telling you that all foods are nourishing and can be part of a balanced diet💛
just me coming at you with another tik tok trend i just me coming at you with another tik tok trend i tried out. i made the garlic ginger sesame noodles that i’ve seen on almost every recipe tik tok and they were super yummy! i paired them with some teriyaki tempeh and edamame! FOR THE RAMEN NOODLES: In a saucepan, I mixed together avocado oil, 1/4 cup soy sauce, 2 tbsp sweet chili sauce, 3 minced garlic cloves, 1 tbsp brown sugar, 2 tsp ground ginger, and a dash of water. if you want to add a little ✨spice✨ add in 2 tbsp sriracha! this was my first time making my own sauce for ramen and it was super good!! i’m a huge fan of garlicky ginger sauces and this recipe would pair super well in a stir fry too! happy sunday! 💛☁️
happy saturday!!! i’m back to making smoothies n happy saturday!!! i’m back to making smoothies now that the weather is warming up (or i guess warm for ohio). in this smoothie i added frozen mixed berries, banana, acai juice, spinach, and chia seeds! it was super yummy and refreshing. i hope you all have a great weekend! 💛💛
another day, another bowl of oatmeal 🥣 it’s s another day, another bowl of oatmeal 🥣 it’s starting to finally warm up here in ohio which has been making me so happy!! i’m a little bummed the snow is melting, but super happy that its no longer freezing out. my favorite way to make oatmeal recently has been with strawberries, peanut butter, chocolate chips, chia seeds, and blueberry syrup on top 🙌🏼 its so good i swear happy wednesday!! 💛💛
