Vegan Mushroom and Spinach Grilled Cheese Sandwich

This vegan mushroom and spinach grilled cheese sandwich is the perfect easy lunch recipe. It is made with grilled mushrooms, spinach, and vegan cheese, making it a super delicious and comforting meal!

Is there anything more comforting than a grilled cheese sandwich?? Honestly, I don’t think so. Plus, it’s the perfect meal for when you just want something quick, easy, and yummy. I also loved grilled cheese sandwiches because you can make them in a variety of different ways. You can add whatever toppings you would like or easy them as is!

Which Bread is the Best for a Grilled Cheese?

Personally, I chose to use two slices of oat bread to make my grilled cheese sandwich. I really love oat bread for sandwiches and toast because it is soft and fluffy like white bread but still contains some great nutrients and whole grains.

You can also definitely use whole grain or multigrain bread for this sandwich as well. It’s 100% up to personal preference.

What Vegan Cheese Should I Use?

I have made this sandwich a variety of times using different types of vegan cheese options. For this specific sandwich, I chose to use Trader Joe’s vegan queso sauce. The sauce itself is pretty thick and spreads really well onto a sandwich. It also added a little bit of spice and flavor, which I really loved.

I also love the vegan cheese brand Follow Your Heart. Their smoked gouda cheese slices are absolutely delicious on a grilled cheese and melt really well.

Another great option is Field Roast’s Chao vegan cheese. Again, their cheese tastes super delicious and melts really well onto a grilled cheese sandwich.

The thing with vegan cheese that I’ve found is some brands are super delicious and some are not so much. When trying vegan cheese, it’s best to try a variety to see which you like best. All are made differently and taste a little different, so if you don’t like one, try another.

How to Make a Vegan Mushroom and Spinach Grilled Cheese Sandwich:

First, you’ll want to spread butter on one side of each slice of bread. Then place the buttered side of one piece down onto a sauce pan and add two slices of vegan cheese. Or if using a queso spread, add about 2-3 tbsp of queso onto the bread.

Add mushrooms and spinach onto the sandwich in a thin layer. Then top with the second slice of bread with the butter side facing upwards.

Cook on medium-high heat for about 2-3 minutes and then flip over and cook on the other side. Wait for the bread to get a golden-brown color and the cheese to melt.

Other Add-In Options for Grilled Cheese:

For this sandwich, onions and tomatoes would also taste super delicious. You could also try a pesto spread or different cheese spread as well!

Ingredients
