Happy Sunday everyone!! Today I have this delicious chia seed pudding recipe for you all. As my dietetic internship is starting soon, I’ve been looking for quick and easy recipes to make that I can grab in the morning. This chia seed pudding is one that I’ve been loving as you can just make it quickly the night before and then grab it in the morning! It’s filled with protein, fiber, and healthy fats which will help to keep you full for longer.
Another plus of this recipe is that you can make it any flavor you prefer. Today, I made a mixed berry one but you could also do mango, banana, peanut butter, chocolate, etc. Anything you prefer would taste super good in this recipe!
How to Make Mixed Berry Chia Seed Pudding:
For one serving, you’ll need 1/4 cup chia seeds and 1 cup non-dairy milk. I used vanilla almond milk for mine, but you can use any milk that you prefer.
You’ll want to combine the milk and chia seeds together and mix. Then cover and set in the fridge overnight. The chia seeds will form a jelly consistency with the milk, making it taste like pudding.
For the mixed berry topping, I blended up some frozen berries with a little milk and then added it in! I also topped with some fresh blueberries and granola!

Mixed Berry Chia Seed Pudding
Ingredients
- 1/2 cup chia seeds
- 2 cups almond milk
- 2 cups frozen mixed berries
Instructions
- In a bowl, whisk together the chia seeds and almond milk.
- Pour the mixture into two containers and close with a lid.
- Store in the fridge overnight for 8-12 hours.
- In the morning, blend the mixed berries with a little bit of milk and pour over the chia seed pudding.
- Top with any preferred toppings and serve!
