Fudgy Vegan Chickpea Brownies

These super chocolatey and fudgy vegan chickpea brownies are the perfect, delicious treat! They have hidden chickpeas inside which add to their rich texture and provide some protein to these brownies!

Ugh you guys are going to die over these brownies. I swear!! They are super fudgy which to me equates to the perfect brownie. They also have chickpeas hidden inside which makes them even better. The chickpeas add to the chewy texture of the brownies and help to bind them together since these are both vegan and gluten-free. These are a healthier twist to your regular brownie, but just as delicious!

How to Make Vegan Fudgy Chickpea Brownies:

Ingredients

  • chickpeas
  • cocoa powder
  • oat flour
  • maple syrup
  • chickpea flour
  • peanut butter
  • baking powder
  • baking soda
  • salt
  • vanilla extract
  • chocolate chips

Chickpea Flour

I love using the chickpea flour in this recipe as an egg substitute, which really helps to bind the chickpeas and add the fudginess. First, you’ll want to mix 3 tbsp chickpeas with 3 tbsp of water and set aside. Let sit for about 5-7 minutes so that the mixture can thicken.

Steps:

Preheat oven to 350 F.

First, you’ll want to add the chickpeas, oat flour, and peanut butter into a blender or food processer and blend until smooth. This is important, as it helps to blend down the chickpeas and make them extra creamy.

Then add in the cocoa powder, maple syrup, baking powder, baking soda, salt, vanilla extract, and chickpea four mix into the food processor. Blend until creamy.

Then fold in about 3/4 cup of chocolate chips to the mixture. Pour into a 9×9 baking pan and bake for 20-22 minutes. If using a smaller pan, bake for about 30- 32 minutes or until a toothpick comes out clean.

Substitutes

  • Oat flour – you can substitute for any other gluten-free flour! Almond flour or coconut flour would also work great!
  • Peanut Butter – you can substitute with any other nut butter (almond butter, cashew butter, etc). Do not leave out though!! This is what helps to bind the brownies and make them fudgy.
  • Chickpea flour – can substitute for 1 tbsp flaxseed + 3 tbsp water. The texture may be a little different but a flax egg will help bind as well!

Storage

Store in the fridge in an airtight container for up to 5 days!
