In a small pot, combine the oats, milk, and 1 tbsp cinnamon and cook for about 5-10 minutes or until boiling. Make sure to continuously stir to prevent the oats from sticking to the bottom.
Slice the apples into small cubes. Add the sliced apples into a small saucepan with 1 tbsp cinnamon and 1/4 cup milk. Saute in the pan until the apples are completely softened. Add in more cinnamon to your taste preference.
Combine half of the apples from the saucepan into the oats in the pot. Mix together.
Pour the oats into a bowl. Pour the rest of the apples on top. Sprinkle on a little cinnamon and serve.
