Ingredients

For the Cookie

  • 1 1/2 cups white flour
  • 1 cup almond flour
  • 1 cup vegan butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 3 tbsp chickpea flour + 3 tbsp water
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cup dairy-free chocolate chips

For the Oreos

  • 16-20 oreos

For the Brownie

  • 2 cups white flour
  • 1/4 cup cocoa powder
  • 1 cup white sugar
  • 1 cup almond milk
  • 3 tbsp chickpea flour + 3 tbsp water
  • 1/2 cup chocolate chips, melted
  • pinch of salt
  • 1 tsp vanilla extract

Instructions

For the Cookies

  • Preheat the oven to 350 F.
  • First, you want to cream the butter and sugar together until fluffy. You can do this by using a hand mixer or a spoon will work just fine (which is what I used). Just make sure that it mixes together perfectly.
This will be the bottom layer of your slutty brownies. So you want to spray an 8x8 baking pan (or honestly whatever size you have) and pour this into the bottom. Flatten it down gently with your hand.
  • Then you want to add in the flour, baking soda, and salt and combine together. Don't overmix, just mix well enough that everything is combined.
  • Then add in your chickpea flour mixture and vanilla extract. Lastly, add in your chocolate chips and make sure that everything is well mixed together.

For the Oreos

  • Add about 16-20 oreos in, depending on the size of your brownie pan. Add them in even rows.

  • Then add in the almond milk, chickpea flour mixture, vanilla extract, and melted chocolate. To melt the chocolate, combine 1/2 cup chocolate chips with about 1 tbsp coconut oil or butter and microwave. You could also heat it on the stove if you prefer. You can also add in a handful of chocolate chips to the brownie mixture for an extra ounce of chocolate.
  • Once everything is mixed together, pour the brownie mixture on top of the oreos and cookie base and smooth out.
  • You will want to bake this at 350 for about 40 minutes.
