soo i have to admit that i’m not a huge salad pe soo i have to admit that i’m not a huge salad person 🤷🏼‍♀️ don’t get me wrong, i love veggies and greens and all the in betweens. but for me to eat a salad, it has to be a killer one.

i do, however, absolutely love beets. i went through a phase a few months ago where i put beets on everything. sooo since its now summer and salad season, i figured i would combine my lack of love for salads with my love of beets. and i have to say, this salad may be a new fav.

i sprinkled some walnuts on top (gotta get those omega-3s) and drizzled it with a maple balsamic dressing. so good 🙌🏼 so if you’re like me and not a huge salad person, this may be the salad for you. happy friday friends!! 💛
made these banana chocolate chip omega-3 bites and made these banana chocolate chip omega-3 bites and they may be my new favorite snack 😍 they are made with oats, dates, bananas, flaxseeds, chia seeds, walnuts, and hemp hearts. each bite has 900 mg of omega-3s and a ton of protein 🙌🏼 they also are super simple to make and taste delicious! link to the full recipe is in my bio and swipe to see some nutritional benefits of omega 3s 💫
happy memorial day!! we finally have super beautif happy memorial day!! we finally have super beautiful 80 degree weather here in ohio which is perfect for grilling and all the memorial day celebrations (in quarantine of course). this fun pomegranate apple cider vinegar lemonade should definitely be on your list of drinks to make today. not only is it super refreshing, its also filled with awesome nutrients (hello antioxidants from the pomegranate juice). this recipe takes 2 seconds to whip up and tastes super delicious. its a mix of bitter and sweet, making it the perfect refreshing lemonade. link in bio 💫

welp heres another quinoa bowl for you all because apparently i can’t get enough. quinoa is just so good though!! both taste wise and nutrient wise. i mean just swipe to see what a powerhouse this gluten-free grain is. did i mention it’s a complete protein? okay definitely turning into a quinoa fan page.

todays quinoa bowl of the day is a mexican quinoa bowl with sofritas. yep like what chipotle makes. but better. this bowl has sofritas and black beans and lettuce and tomatoes and onions and guac. i mean what more could you want in a quinoa bowl?? this bowl is loaded with fiber, protein, and nutrients which will help keep you full longer throughout the day.

raise your hand if you love quinoa as much as i do 🙋🏼‍♀️🙋🏼‍♀️ maybe quinoa bowl of the day should become a thing? no?

sooo i was going to caption this post “it’s fi sooo i was going to caption this post “it’s finally milkshake weather.” but its 50 degrees and rainy here in ohio so maybe not. raise your hand if you’re in favor of pretending its 75 and sunny out 🙋🏼‍♀️ or that i should probably move somewhere with a warmer climate (california i’m looking at you). even though its cold and rainy today, this vegan chocolate swirl milkshake is definitely a pick me up. i mean what more could you want?? chocolate and vanilla ice cream PLUS chocolate sauce drizzled inside?? cold weather already forgotten.

i used my fav @aldiusa earth grown vanilla and chocolate ice cream for this recipe and it turned out bomb. their vegan ice cream is super affordable, made with almond-milk, and it’s creamy and delicious. just add all your ingredients to a blender and top with some vegan whipped cream (or even more ice cream which is what i did). you can never have too much ice cream right?

also i know i mentioned in a previous post that i was going to discuss the nutritional benefits of some ingredients in my recipes, and i’ll definitely keep doing that for some (not all) of them. however, i definitely think its important to note that something doesn’t always have to be super nutritious for you to eat it. like this milkshake. i didnt eat it because it provided me with x amount of nutrients. i ate it because its delicious and i really wanted a milkshake 🤷🏼‍♀️ food/nutrition/ health are all about balance friends. sometimes we want a salad and sometimes we want a milkshake and that’s totally ok.

Let’s talk about carbohydrates 👇🏼 i can’ Let’s talk about carbohydrates 👇🏼 i can’t tell you the amount of times someone has told me that carbohydrates are bad or that they are cutting out carbs. if you have a fear of carbs let me be the one to tell you that CARBS ARE NOT BAD!! 45-65% of our calories should come from carbohydrates. why? because its the main source of energy for our body.

there are also two type of carbohydrates: complex and simple. complex carbohydrates include whole grains, starchy vegetables, fruit, and legumes. not only do these provide us with energy, they also provide us with fiber, vitamins, minerals, and phytochemicals. simple carbohydrates include sweets, sugar, baked goods, and desserts. these also are part of a balanced, healthy diet. it’s just all about moderation and honoring what your body is craving. so next time your body wants a cookie, eat the cookie!! •

cutting out an entire food group such as carbohydrates can leave us not providing our body with enough energy, fiber, and nutrients. also, fruits, vegetables, and whole grains have been studied for their properties in disease prevention and overall health. so next time you go thinking carbs are the devil, think about how they are working to keep you healthy and nourished.

sooo i did something a little different for this s sooo i did something a little different for this smoothie recipe. i want to start posting more about nutrition on this account, so i’ve decided for some recipes i’m going to highlight the nutritional properties of one of the ingredients. i also included a price breakdown per recipe on the blog post to also highlight how eating plant based can be affordable! i did this on one of my old blog posts and you guys seemed to really like knowing the cost of foods and where i buy certain things from, so i want to start doing that again!

today i made a mixed berry smoothie which is super delicious and packed with so many nutrients. i mean how can you go wrong with smoothies? since this recipe include blueberries, strawberries, and blackberries, i highlighted the nutritional properties of these fruits for you all! berries are great sources  of vitamin C, fiber, and antioxidants. they have been heavily researched for their role in disease prevention and health 🍓the full recipe is linked in my bio 💫 let me know if you guys like the idea of seeing the nutrition info for some ingredients and the price breakdown! happy tuesday!! 💛
mondays def call for noodle bowls and this spring mondays def call for noodle bowls and this spring roll noodle bowl with peanut sauce has quickly become one of my favorites 😍 especially now that we have warm weather (finally) here in ohio, this is the perfect summer recipe to make!

in the bowl 👉🏼 rice noodles, teriyaki tofu, shredded carrots, avocado, lettuce, onion, and cucumber. topped with a thai peanut sauce 🙌🏼

your thursday needs these spicy sriracha buffalo c your thursday needs these spicy sriracha buffalo cauliflower wings 😍officially started my dietetic internship yesterday so this week has been a little bit of a whirlwind. with coronavirus and everything, the internship is going to be online until we are cleared to do in person training. it stinks a little that this pandemic has affected something i’ve been looking forward to for a while, but i’m hopeful that it will still be an awesome experience regardless!! its super cool to think that i am only one year away from becoming a registered dietitian!! i swear the time has flown by so quickly 😱

these spicy cauliflower wings have definitely been a mood boost though this week. i have tried making these in the past but they never turned out quite right! but this recipe is definitely a winner!! pair with some vegan ranch and you have yourself the perfect snack or side dish!
